As much as I hate giving anything less than a five-star review, Deliciously Ella’s sweet potato brownies were a little too complicated to be absolutely perfect.
Unlike Detoxinista’s desserts — which usually take five seconds to prepare, are easily modifiable and taste even better than the sugar-filled alternative — my boyfriend described Deliciously Ella’s brownies as “a little funky,” which I couldn’t help but interpret as code for “I don’t like them.”
Since the brownies took about two hours to prepare, that wasn’t exactly the reaction I’d hoped for!
Made of steamed sweet potatoes, pitted medjool dates, almond flour, brown rice flour, maple syrup and cacao — all of which is pulverized in a food processor and then baked in the oven — the brownies are more guilt-free than just about any alternative.
But the first issue — and of course this isn’t Ella’s fault — is that sweet potatoes vary greatly in size. I thought I had two medium sweet potatoes, but the fact that they were supposed to steam in 25 minutes and still weren’t done after 45 led me to believe I was mistaken.
Ella does give a weight to aim for, but I don’t have a kitchen scale. Moreover, if you have to use a scale, a steamer, a food processor and the oven, it’s not exactly the simple recipe promised.
The second issue is that steaming the sweet potatoes adds — if everything goes according to plan — a good 20 minutes to your prep time. If I make them again, I think I’ll just pop them into the microwave instead, saving myself some dishes and time.
Moreover, unless you have a super-grande food processor (I have an 8-cup, and it was still an ordeal), the stickiness of the dates and large quantities of other ingredients have you stopping the blender and scraping the sides more times than I care to recall. A proper KitchenAid mixer — the kind people make big batches of cookies with — might work better, though I don’t know how well that would work with the dates.
All in all, I still would highly recommend Deliciously Ella’s cookbook. The other recipes I’ve tried, like the roasted sweet potatoes, have quickly become an addiction. Her blog is absolutely amazing, and so is her story. But the brownies are probably best reserved for a special occasion with other people who enjoy healthy eating : )
